You've got a can of refried beans, and you're in the mood for some great Mexican food. This simple and quick single-pan recipe adds loads of flavor to otherwise humble canned refried beans, elevating them to greatness.
Ingredients
1 can refried beans
1/2 medium onion, chopped
2-3 garlic cloves, minced
3 tbsp olive oil
Salt to taste
1/4 tsp Accent
Directions
Preheat a medium skillet (preferably cast iron) under medium heat.
Add 2 tbsp olive oil, and heat until shimmering.
Add onions and toss with a dash of salt. Let sit until edges brown (about 2 minutes). Stir and continue browning until onions are nicely caramelized and somewhat translucent.
Add minced garlic and stir. Wait for about 1 minute until the garlic "blooms" and you can clearly smell the aroma. Don't overcook.
Add 1 can of refried beans, and mix thoroughly. Add additional olive oil (1 TBSP) if necessary to bring to a smooth paste consistency.
Add Accent and stir thoroughly. Stir in additional salt to taste, and serve!
I use these refried beans for tacos, quesadillas or as a standalone side dish.
